Last week was pretty uneventful which is good news when comes to sticking to my food plan! I was going to try and make sweet and sour chicken on Saturday night but we ended up out all day so I by the time I got home I didn’t fancy trying something new. I just threw a meal together with what we had. Will maybe try again in a week or two.

This week I am going to try a vegetable chilli. Chilli is an awesome meal to make in bulk and whilst I like a classic chilli, I wanted to try a vegetable version that might be a bit lighter to eat late in the evening. I have been looking up a lot of different recipes so will see what I can put together! Looking forward to trying it out.

I try to make one new dish a week to keep things fresh and because I enjoy it. I used to get worried about trying new dishes in case they did not turn out right, but now I just go for it! They do not always work out, but that is part of the learning process. I really believe that if I did not learn how to make a variety of healthy and delicious recipes I would find it much harder to stick to a healthy regime. As it is I love every single dish I make and always look forward to meal times! Eating well is awesome!
