Who does not enjoy chicken and rice as a classic combo? What I like about this recipe is that it adds in a little variety with the olives and sun dried tomatoes, but is still a recipe for all the family. It is also a great one to cook if you are having friends over for dinner. It looks pretty impressive and tastes great, but has minimum fuss and calories!
Chicken and rice are such household staples, but this dish allows you to make them that bit more interesting. It takes a little more time that some of my other recipes, but is still super simple and I promise it will be worth it!
