We eat as much with our eyes as we do our mouth so this mix of roasted veggies is a delight for both! I have not posted a full recipe because it is so simple I do not think I could justify it! All I did was chop some butternut squash into cubes, chop some broccoli into florets, chop some mushrooms, cut red onion into wedges, drizzle over some olive oil, season with salt and pepper and mix together well!

Cook at 200ºC for 40 minutes or until all veg is cooked through and serve hot!

I put this veg together based on what I had in the house and it turned out delicious! Next time, I might add some freshly chopped chilli or finely sliced garlic just to vary it up. However, it really does not need anything else.

I love roasted veg as is it so simple and really transforms the flavour of so many vegetables. If you struggle to eat vegetables, try roasting them in some olive oil and it may just change your mind!
