Recipe: Chorizo, Chilli & Chickpea Casserole
I feel like a traitor to my Italian roots posting this delicious Spanish dish. I have no idea how traditional it is to Spanish cuisine to be fair, all I know is that it uses chorizo and tastes really good! I do know for sure though that before anyone makes this dish they will want to discuss how healthy chorizo is and they would be right to as it is quite high in calories and has a high fat content. However, that does not mean you can never eat it, I would just eat it less often that other meats like fish, chicken and turkey. I make this dish at most once a month so I am not too concerned about overeating chorizo.
You will notice that this recipe serves 8 and that is simply because I like to make a big pot of it and have it last a few days. However, it is also the ideal dish to serve to friends and family as it looks and tastes incredible, but for you is a simple, fuss free, one pot dish. What more could you want? You can also serve it with rice or even on its own as a great carb free dish. It works well as a carb free meal because chickpeas are a really filling pulse ensuring you wont find yourself hungry an hour later. I would have a slightly bigger portion of the casserole though, if you are not having rice with it.
