Cauliflower is a classic British vegetable but, like it’s friend broccoli, it can be seen as pretty boring! Unless, of course, it is coated in cheese! Always on the hunt for ways to make vegetables more varied and exciting, I searched for “Italian Style” cauliflower and found a number of recipes. I eventually mixed a few of them and came up with this recipe. The flavours are simple, but just add a bit of excitement and colour to this popular vegetable.
It is fair to say that vegetables are THE most important food group to get into our diet, but is one that many people, especially children, do not enjoy. I think part of this is due to lack variety and imagination. Vegetables, like any other food, can taste so different depending on how we cook them, with what flavours and what we partner them with. Therefore, if you think cauliflower is boring, try this recipe and see if it changes your mind!
I include vegetables with every lunch and dinner and normally have fruit as a snack or with my breakfast. By doing that, hitting 5 pieces of fruit and vegetables a day is easy! It is important to think about vegetables as a key part of each meal, just as you would think about what piece of protein to have or what carbohydrate. If you can you do that, you will find your meals keep you fuller for longer, without adding on many extra calories.
