Recipe: Chicken & Vegetable Couscous
This dish is fast becoming a favourite in the De Marco/Spella household! It makes for an awesome packed lunch as it is tasty hot or cold, is perfectly balanced with carbs, protein, fat and plenty of vegetables making it healthy and filling, plus it tastes amazing! Sometimes, I add in some halloumi too just to add another flavour to the dish.
This dish is also incredibly versatile as you can use prawns instead of the chicken and really any vegetables at all! For a long time I was not actually a fan of couscous as I thought it was pretty boring, but like most foods it was all about trying it different ways and finding what works! Give this a go for the perfect packed lunch!
