Recipe: Italian Butternut Squash Soup
I have to confess that soup is not one of my big food loves. I do not dislike it, but I would not say it is something that particularly excites me! However, I regularly make a pot as it is nice and warming on a cold day, it is incredibly convenient and, importantly for me, it serves as a light dinner when I need to eat late in the evening. As regular readers know, I have a new love for butternut squash, so I wanted to both find a new soup that excited me a bit more and used my new fave ingredient. I will say I managed that and more with this soup!
This soup is incredibly tasty! I have made it a few times now and can genuinely say that I always look forward to eating it. The big test came when I served Giulio a bowl though. He is the exact opposite to me, a big soup lover and connoisseur! He absolutely loved it…Phew! Therefore, I figured, if it is good enough for him, it is good enough for the blog. So, here it is…
For me, the best thing about soup is that you can always pack it full of vegetables and it becomes one of the simplest and most convenient ways to get your 5 a day (or whatever the recommend amount is these days). Also, butternut squash is a very filling vegetable so I find this soup fills me for longer than many others.
