Stuffed peppers is a dish that I very much associate with my Nonna as they were a regular feature at Sunday dinners. I have always absolutely loved them, but do not make them as often as I should! Trying to rectify that, I have made them this week and am sharing the recipe with you in the hope that you will love them as much as I do.
This recipe for stuffed peppers creates a perfectly balanced meal. There is protein from the pork, a small portion of carb from the rice, good fats in the olive oil and of course vegetables. What is not to love! Give them a try!
